Delivery in Person

If I sell something to a buyer in my city, and decide to deliver it myself, how to I enter the shipping details in ebay and how do I get a Proof of Delivery

I can use a courier, but if the buyer is requesting a certain time of delivery, it can be a problem

You can ask your delivery person to get an acknowledgement from the buyer as proof of delivery.

and what do I enter in ebay, where it asks me to enter shipping details within 7 days.
I usually have to enter the name of the courier and the tracking number in ebay. If I get it delivered in person, I wont have any courier details

Do Not Deliver like that if the buyer paid with paisapay you might endup in trouble

If this direct delivery is a need then you may follow below process.
Raise an invoice or take the eBay invoice printout along with delivery challan copy (you can create yourself).
Delivery the item to Buyer.
Ask him to sign on the duplicate invoice copy or a delivery challan copy along with his Idenitity card numbers (passport, liscence etc;) along with his phone number.
Update eBay paisapay with your name as courier name by choosing 'other' and for awb put your delivery challan copy / invoice number.
