If you have subscribed to Selling Manager then click the Sales record number and scroll down to go to
Sale Status & Notes
Uncheck the box against
Payment Information
If you don't have Selling manager then go to ...
Items I've Sold
Go to the ID of the Buyer and scroll horizontally.
On the exreme right you have a Drop down box showing
Mark as Shipped
Click the Drop down Menu and then click
Unmark as payment received
