A buyer wants to have an exchange in person instead of shipping.
Is it advisable ? How do I manage the shipping and other process details of the item if there is no shipping ? What is the proof of delivery here ?

There is no proof of delivery. Do not opt for such a method as if buyer claims tomorrow that the product was not received you wont be able to prove.
Dispatch the product via some courier which would provide tracking number.
